Ingredients:
5-7 lb whole chicken
2 tbsp melted butter
1/2 large, quartered yellow onion
2 stalks celery
Brewhead Craft Seasonings All-Purpose Rub
Instructions:
- Brush melted butter over entire chicken and generously rub with Brewhead Craft Seasonings All-Purpose Rub on top and under the skin
- Stuff cavity with quartered onions and celery stalks
- Wrap in aluminum foil and leave in fridge for at least 2 and up to 12 hours
- Preheat grill (indirect heat)/smoker to 250F with wood of your choice (I generally lean toward sweeter woods like maple or apple for poultry)
- Once pre-heated and thin blue smoke is flowing add chicken directly to grill grates
- Smoke until thickest part of breast reaches 165F (usually about 45 minutes per pound), crank heat up or transfer to broiler for a few minutes if you prefer crispier skin
- Remove from heat and allow to rest 10 minutes before carving
Baked Alternative Instructions:
- Brush melted butter over entire chicken and generously rub with Brewhead Craft Seasonings All-Purpose Rub on top and under the skin
- Stuff cavity with quartered onions and celery stalks
- Wrap in aluminum foil and leave in fridge for at least 2 and up to 12 hours
- Preheat oven to 450F
- Place chicken, breast side down on foil-lined roasting pan (with rack if you have one) and cook for 20 minutes
- Reduce heat to 375, turn chicken over, baste with pan juices, and continue cooking for about 20 minutes per pound until the thickest part of the breast reaches 165F
- Remove from the oven and allow to rest 10 minutes before carving
