Rich and complex, these mashed potatoes are the perfect accompaniment to any hearty, home-cooked meal (like our Stout-Braised Beef Short Ribs)!

- Serves: 2-4 people
Ingredients:
2 lbs red potatoes cut into eighths (I like them skin-on, but feel free to peel)
2 tbsp butter
1 tbsp minced garlic (or roughly 3 cloves minced) lightly browned
2 tbsp prepared horseradish
1 tbsp Dijon mustard
¼ cup milk
Salt & pepper to taste
Veggie broth (enough to cover potatoes)
1 tbsp Brewhead Craft Seasonings All-Purpose Rub
Instructions:
- In a large pot, bring veggie broth to a boil
- Add potato wedges, cover and simmer until soft (about 20 minutes)
- Drain potatoes and mash or whip with butter, milk, Dijon, garlic, horseradish and AP rub
- Serve as-is or garnish with chives, sour cream, bacon, etc...
