Brewhead Mashed Horseradish Garlic Red Potatoes

Rich and complex, these mashed potatoes are the perfect accompaniment to any hearty, home-cooked meal (like our Stout-Braised Beef Short Ribs)!

  • Prep Time:  5 minutes
  • Cook Time:  20 minutes
  • Serves:  2-4 people

Ingredients:

2 lbs red potatoes cut into eighths (I like them skin-on, but feel free to peel)

2 tbsp butter

1 tbsp minced garlic (or roughly 3 cloves minced) lightly browned

2 tbsp prepared horseradish

1 tbsp Dijon mustard

¼ cup milk

Salt & pepper to taste

Veggie broth (enough to cover potatoes)

1 tbsp Brewhead Craft Seasonings All-Purpose Rub 

Instructions:

  1. In a large pot, bring veggie broth to a boil
  2. Add potato wedges, cover and simmer until soft (about 20 minutes)
  3. Drain potatoes and mash or whip with butter, milk, Dijon, garlic, horseradish and AP rub
  4. Serve as-is or garnish with chives, sour cream, bacon, etc...
