Brewhead Grilled Chicken Thighs

  • Cook Time:  20-30 minutes
  • Prep Time: 10 minutes
  • Servings: 8 thighs

Ingredients:

8 Bone-in, skin-on chicken thighs

1/4 cup olive Oil

1/4 cup dijon mustard

1 Lemonchr

Brewhead Craft Seasonings All-Purpose Rub 

Instructions: 

  1. Trim excess fat from chicken thighs
  2. Stir/whisk juice of 1 lemon, dijon mustard and olive oil in a small container until combined
  3. Lightly coat each thigh with lemon/dijon/oil mixture
  4. Liberally apply AP rub to chicken... don't be shy
  5. Allow chicken to marinade in refrigerator for at least 30 minutes prior to grilling or as long as 12 hours
  6. Preheat half of grill to medium-high heat
  7. Sear chicken over lit side of the grill for 2-3 minutes on each side or until the skin is golden brown
  8. Move chicken to unlit side of the grill and allow to cook, covered, until internal temperature reaches 165 degrees F
  9. Remove chicken from grill and allow to rest, loosely tented under foil for 5 minutes
