Ingredients:
8 Bone-in, skin-on chicken thighs
1/4 cup olive Oil
1/4 cup dijon mustard
1 Lemonchr
Brewhead Craft Seasonings All-Purpose Rub
Instructions:
- Trim excess fat from chicken thighs
- Stir/whisk juice of 1 lemon, dijon mustard and olive oil in a small container until combined
- Lightly coat each thigh with lemon/dijon/oil mixture
- Liberally apply AP rub to chicken... don't be shy
- Allow chicken to marinade in refrigerator for at least 30 minutes prior to grilling or as long as 12 hours
- Preheat half of grill to medium-high heat
- Sear chicken over lit side of the grill for 2-3 minutes on each side or until the skin is golden brown
- Move chicken to unlit side of the grill and allow to cook, covered, until internal temperature reaches 165 degrees F
- Remove chicken from grill and allow to rest, loosely tented under foil for 5 minutes
