1-Pot Roast Beef Dinner

  • Cook Time:  3 hours
  • Prep Time: 10 minutes 
  • Servings: 6-9

Ingredients:

3 lb bottom round beef roast

2 tbsp butter

2 leeks sliced into rounds (tough greens discarded)

6 carrots cut into large chunks

4 large red potatoes quartered

1 cup beef stock

1/4 cup stout

1 tbsp minced garlic

Brewhead Craft Seasonings All-Purpose Rub

Instructions:

  1. Preheat oven to 300F
  2. Trim excess fat from roast and liberally apply Brewhead Craft Seasonings All-Purpose Rub
  3. Melt butter in Dutch oven over medium-high heat
  4. Sear roast on all sides
  5. Add remaining ingredients to pot
  6. Bake covered for around 3 hours or until beef is fork tender
  7. Allow roast to rest for 10-15 minutes
  8. Slice & serve roast with pot liquid spooned over the top (thicken with corn starch or flour first if preferred)
