Ingredients:
3 lb bottom round beef roast
2 tbsp butter
2 leeks sliced into rounds (tough greens discarded)
6 carrots cut into large chunks
4 large red potatoes quartered
1 cup beef stock
1/4 cup stout
1 tbsp minced garlic
Brewhead Craft Seasonings All-Purpose Rub
Instructions:
- Preheat oven to 300F
- Trim excess fat from roast and liberally apply Brewhead Craft Seasonings All-Purpose Rub
- Melt butter in Dutch oven over medium-high heat
- Sear roast on all sides
- Add remaining ingredients to pot
- Bake covered for around 3 hours or until beef is fork tender
- Allow roast to rest for 10-15 minutes
- Slice & serve roast with pot liquid spooned over the top (thicken with corn starch or flour first if preferred)
